To Age or Not to Age? The Charm of Wine, Young and Old.

When it comes to wine, ageing isn’t as simple as saying “better with time.” Most of us in Australia enjoy our wine within days of purchase—fresh, bright, and fruit-forward. And honestly, that’s part of the charm! But some wines also have the structure and depth to evolve beautifully with age.

So, how do you know if a wine will age well? Look for traits like tannin and acidity—they act like the backbone, helping the wine develop gracefully. To make things simple, we’ve done the hard work for you.

Does Wine Really Age Gracefully?

Absolutely—when it’s the right wine. Wine is a living, changing solution of acids, tannins, and flavour compounds that interact over time, creating new aromas, textures, and depth.

Here’s how our White Label wines tell the story of age:

  • Chardonnay: The 2022 sings with white nectarines and citrus, while the 2016 has softened into a mellow, rounded beauty.

  • Pinot Noir: Notice the colour shift—from vibrant red in 2021 to a softer brick hue in 2016—matched by a more savoury flavour profile.

  • Cabernet Sauvignon: Bold and tannic in 2019, but three years later in 2016, those tannins have relaxed into velvety smoothness.

Looking After Older Wines

Just like us, wine needs a little extra care as it ages.

Storage: Keep it cool (15–18°C), away from heat, light, and vibration.

Decanting: Young wines benefit from air to open up their fruit. Aged wines, like our 2016s, enjoy about an hour of decanting, which also separates them from natural sediment. But if a wine is very old, skip the decanter—delicate wines can spoil quickly once opened.

Young vs Old – Why Choose?

The joy of wine lies in contrast. Fresh vintages burst with fruit and energy, while aged wines bring complexity, softness, and depth. Tasting them side by side is the best way to understand the journey of wine.
