Made with delicate fruit sourced from select vineyards in the Yea Valley and Gruyere in the Yarra Valley; the coolness of these vineyards ensures freshness and acidity. This sparkling wine made from 100% chardonnay grapes heroes orchard fruits and citrus, with soft brioche notes and a creamy mouthfeel.

A delicate aperitif style sparkling that makes a regular catch-up with friends feel like a special occasion.
Tasting Notes

Colour: pale lemon
Aroma: green apple, lemon pith, fresh bread
Palate: floral, yellow apple, brioche, fresh
Cellar: drink now but will improve with age over the next 5 years
Occasion

Drinks with friends that turned into dinner. Fried calamari, fries (with or without sauce), guindilla peppers and whatever salad you can scrounge from the vegetable drawer
Winemaking

Region: Yea & Yarra Valley
Vineyard: Select vineyards in the Yea Valley & Gruyere, Yarra Valley
Process: Grapes were chilled and pressed upon arrival to the winery. Juice was clarified and inoculated with sparkling style yeast
Fermentation: Cool fermented in tank and then matured on lees for 15 months, 5% malolactic fermentation
Alcohol: 12.2%
